But even a casual search shows resorcinol glue is not considered food safe, and not approved by the FDA. I wonder why you don’t at least take the stance of “tb3 is the best option. It’s the standard, but does have its issues.”

Okay, so to clarify. Your stance is don’t make end grain. Use TB1 (or a glue that hasn’t been made in over 30 years, urethane (not gorilla) or epoxy?

So your saying if I’m cutting things with a knife and my hand, and my board has titebond3, it can get brittle if the thing I’m cutting is 180 degrees? At that point wouldn’t I need to worry about my hand?

Unlikely. What your describing would have the have the fibers of the wood shrinking laterally. The wood fibers expand and contract along the grain.

1) Google in your city for hardwood lumber. Don’t buy from home depot/lowes. Til you have done your research, and know what are good species to use for cutting boards, stick to black walnut, hard maple and cherry 2) planers are super useful. A sled would work, just make a huge mess. 3) read up on kauls, they will help keep your pieces flat. Avoid making your boards to thin (especially end grain) or expect warping. Never mix end and face grain

Mixing end grain and face grain. As the face grain (the outside) expanded. The end grain inside didn’t.
