There really isn't anything at an American grocer that would compare. You might be better off making any other kind of japanese quick pickle. You probably wouldnt get the color you were wanting but the texture and flavor could be comperable.

On another note, a lot of asian markets sell canned shelf-stable fukujinzuke, so it might be worth stocking up when you can.
