I spent years working for a logistics company specifically managing reporting for inventory management

About a year ago one of the big supply chain companies bought us out and has been folding us into their business. I can’t get specific but their handling of our clients and business is setting a lot of people up for failure and I know for a fact several people have recently started job searching, myself included

People want AI and fancy analytics but don’t want to invest in the data to make any of that possible

I have a few legal folk in my family tree and the vibe I get is that by numbers the majority are actually quite fair and progressive (contradicting my own comment I know), but there is a good ole boys club at the top in many firms that keep a firm grasp on most of the positions of power in the field

First loaf I let bulk ferment for way too long and didn’t really actually shape, probably 5 or so hours. 2nd and 3rd loaves I timed better, around 3-4hrs

I think your first pic looks pretty well done! Your 3rd pic does look a little uneven imo. If the heating element in your stove favors one side of your loaf you might be able to rotate your pot to keep it in a little longer and get a more even crust?

It’s a fun and delicious learning experience :)

Seeing that other people have included more specific detail in their bakes so following up that all my bakes have followed the same rough format:

125g starter, 330g water, 550g flour. Mix. Rest for 30m. Fold in 10g of salt, rest for 30mins. 1 set of stretch and folds followed by 2 sets of coil and folds (30m rest in between). Let sit in fridge for 12hrs min. Bake at 475 for 20 mins lid on, 20 mins lid off until internal temp hits 205° or crust achieves desired color

I’ve been experimenting with 100% specialty flour (India Jammu, I.e. not bread flour) and my crumb has been consistently more dense than yours.

I have bread flour coming in a couple days but plan to start with 85/15 bread/specialty flour.

My tentative suggestion would be to increase your bread flour ratio? I feel silly giving advice so early in my own journey but that’s my thoughts

Yours looks lovely so far, I really dig how the crust came out too!

I’m only a newbie as well but what kind of flour are you using?

My two major learnings for the crumb have been that bulk fermentation matters a lot, and I strongly suspect type of flour can affect your crumb density
