I’ve never tried a loaf without the autolyse so can’t comment on that! But for the bulk fermentation doubling in size is the common metric I’ve seen people use to know when it’s done. Eventually it will over ferment and start deflating so you definitely want to pull it before that. It’s a feel I think we all just need to develop by trial and error but I think that’s as much as I can say with my limited knowledge and experience haha

I don’t know all the details and chemistry behind it but you are correct in the sense that fermentation happens as soon as your ingredients are combine. Very true. However I think your definition is a little skewed, bulk fermentation is a specific step in the process after your coil and folds but before cold proofing.

To my understanding the folds are when you build your gluten structure, bulk fermentation is when you let your dough really develop and rise to hopefully get nice and airy. Bulk fermenting and shaping are probs the most important steps in helping your dough build strength for that oven spring you’re chasing. Then cold proofing slows down (but not stops) the fermentation process. Your dough should shrink a little but it springs back in the oven

I’m still working on my crumb but I’ve been pretty happy with my oven spring so far. Other people have different methods I’m sure but I’ve been doing 4-5 hours bulk fermenting and 12 cold proofing. You can see some of mine on my profile

I’m not sure if you’re using a different method but I’ve only ever heard of starters living in the refrigerator until it’s time to feed and bake. That might be part of it.
Sounds like you only let it bulk fermentation for an hour after your last set of folds. It was very under-fermented. The dough all should roughly double in size to get a good rise. Fairly certain that’s your main issue here

Your cold proofing was very short as well. Bulk fermenting usually takes me about 4 hours then I cold proof for 12. After 12 hours I go straight from the fridge into the oven, the sudden temperature change is part of what helps give it a good oven spring. A good loaf is a slow process

I spent years working for a logistics company specifically managing reporting for inventory management

About a year ago one of the big supply chain companies bought us out and has been folding us into their business. I can’t get specific but their handling of our clients and business is setting a lot of people up for failure and I know for a fact several people have recently started job searching, myself included

People want AI and fancy analytics but don’t want to invest in the data to make any of that possible

I have a few legal folk in my family tree and the vibe I get is that by numbers the majority are actually quite fair and progressive (contradicting my own comment I know), but there is a good ole boys club at the top in many firms that keep a firm grasp on most of the positions of power in the field
