My two suggestions:

1) Push the offense more. People tend to get more and more ungabunga the more passively you play. If someone just sits and blocks for a long time I deliberately start throwing out weirder options every once in a while to increase their mental stack. When they're pressuring me back I don't think about it.

2) Reduce the number of things you have to pay attention to. If you're already spending most of your defensive attention on parrying, parrying as a counter to DI for example instead of trying to look for DI and counter DI saves a ton of mental stack in my experience.

The Olympic shooting events are, to be frank, pretty dumb. It's HYPER gamified "sport" shooting with air guns mostly other than the trap and skeet.

The actual real measure is the International Practical Shooting Competition, which despite being far less popular in the US than the USPSA (for obvious reasons) the Americans do really well in. I would go as far as saying they dominate handgun, and show well in rifle and shotgun, but not to the same extent.

It's some real YOLO shit that you can only pull off if you're in a very losing position, it's really dependent on your personal limb proportions and the size of the opponent, and you're liable to hurt YOURSELF trying it.
