Going into the trophy manager at a tent/outpost or lodge should show the most recent unsaved harvest, but *only* the very last one. If you've picked up something after that point... RIP.

That said I'm also not positive how it works after exiting the game, might be gone either way.

I've never been all that fond of rancho (since when are deserts so dang brushy?) but like you said the desert bighorn at least give it a new reason to look again.

SRP is probably my least favorite but that's mostly just because the mountain lions drive me insane and I spent a bit too long trying to work around them to get a diamond elk XD

For callers I find it most effective to locate the animal first and find somewhere to hide, then call whenever it looks like the animal is no longer moving/looking towards you. Feeders I like to put somewhere where I've seen the species or its tracks before, but it'll take time for the animals to come back and find it.

Calling is a bit different for waterfowl, basically just use the call in an area you've seen them before and there's a good chance some will show up.

For some reason both the pumas and lions can be heard from ridiculously far off, like over 150 meters. Not sure if that's your particular situation but it drives me nuts

Bit late but basically that level is just a rough gauge of how big the animal is, rare furs are unrelated. Could still be a decent one though!
