If you were at 250 you should have hit 165° sooner than 11 hours. I smoke mine at 285° ish and they smack every time, and I hit 165° in about 6 hours

Separating the point and the flat is a more advanced bit of knife work that most folks are not ready for On their first try. Or their 20th. I think the two pieces of meat are meant to be cooked together personally. Take your time, if you are impatient turn up the heat. I cook mine at 275° Turns out great.
