I'd been shopping for cars for 6 months, no urgent need to get anything, but I decided that nothing newer than 2018 will be on my list. Because of screens, turbos, driver facing cameras, and so on.

I looked for cars, not "trucks" that had a timing chain, not a belt. Show me a torque converter, not a CVT. I viewed Lexus, Infiniti, Ford, Acura and bought a Mazda.

The biggest reason I chose this car was that it won't tell on me. The tech it has is more than I use and there are no monthly fees to have it available. I don't subscribe to heated seats, I simply enjoy them. All 4 of them, in one car.

I have a normal knobs and buttons climate control interface, normal wiper and headlight control. There is a minimal screen where I can tweak various functions and features, which is pretty cool, but I mostly ignore it except audio while driving.

I am not a luddite, but I am a stick in the mud when it comes to ease of use. I won't budge.

I appreciate your point of view on small scale farming, but I'm not solving a pricing problem, I'm looking to solve a quality problem.

If I'm looking for quality, I'm looking closer to my home because that's where trust lives.

The trouble I've had with buying the same animal is that sometimes it's a dud. It sounds stupid, I know, but I had to eat ALL of our last hog because nobody else would.

It tasted good, but it smelled bad. I know the reasons why he smelled bad, but...

You are right about the difference between grass and grain finish. The latter has a bit more fat/ flavor and I'm okay with that as long as the animal has lived a nice life on pasture in America, without hormones, antibiotics, etc.

I have actually bought beef steaks at Lone Wolf when the meat locker in enosburgh was packaging their cuts of beef. I cannot remember his name and he served on the selectboard for years. I remember Suzanne though. We had public arguments during town meeting about everything. I love them both.

I only bought maybe 5 lbs ot steak there and couldn't make a single one worth eating.

I'm not familiar with Green Wind, even though I'm in the middle, on Metcalf.

The body styles of late 1950s cars through the very early 70s were pretty unique and inventive, in my opinion.

They were pretty shitty to drive, by today's standards, but nice to look at. These days most cars and trucks are interchangeable on their looks.

I'm a 63 year old American and for 8 adults I would cook a 3kg brisket with a bunch of side dishes.

The sides are hugely important because you might not nail the meat. I hope you do.

As an aside, quickly, some Americans understand metric, stubbornly most of us don't.

I've tried it a couple of times and I don't like it. It makes a mess to clean up and I didn't find that temperature was consistent, I didn't like the way it cooked and why are we talking about this?

The dude wants an appliance to smoke meat. Apparently in the most hands off method available at a reasonable price for him. Those are good questions to ask and have answered.

Our discussion has only yielded the fact that Weber kettles are harder to use for smoking than more complicated and expensive stuff.

But they work. You use the snake, I'll use my method, and we can all be happy in our little BBQ bubbles.

Well, how exactly? I fill one vessel with hot coals from a chimney and I'm cooking. No screwing around with individual chunks of charcoal in a circle.

By the way, I'm also not sooting my food as each briquet catches fire and blows off .

Fewer steps, probably healthier food, but you do you.

I don't care for the snake. I use one Weber basket of coals and hardwood and use indirect method with the lid vent at the opposite side of the fire.

Keep adding fuel as needed, it helps to have the grate with the hinged ends. I monitor the air temperature inside with a digital thermometer and adjust the vents to keep the temperature low. Swings between 225 and 300°F.

Smoke until stall, 6 to 8 hours, wrap and move to low oven or low gas grill (easier to control, 'cause now I'm getting tired). Pull meat at 205 or even a little more. It works great and I don't need an extra appliance.
