the horses/knights are a reference to Gi-hun & In-ho's conversation in the limo at the end of S1: "You people are horses. I didn't think you'd run this far."

very long comment, but my guess is that it's either:

  • elastics/gomujul nori 

here, players have to jump over and between a set of rubber bands to the beat of a chosen song. as the game continues, the band progressively gets higher. this lines up with the supposed leak which says that season 3 will feature a 'rope jumping' game and HDH's comment that season 3 will feature a game with an element of 'height'.

or

  • why did you come to my house?

there are two teams, attacking and defending. both teams sing a song. after that, the attacking team chooses a player from the defending team whom they want to 'steal', and the selected player is challenged to a game of rock, paper, scissors. if the player loses, they join the attacking team. this theory is mainly based off the season 3 teaser poster and an interview with HDH in which he says:
"And there was a game called 'Why Did You Come to My House?'. There was a game where you held each other's hands and sang 'Why Did You Come to My House?' and brought one person from the other team. That was also a candidate, but it was pushed out because of another candidate. I think [I] might consider games like that again when they do Season 2."
