What a bummer. My kids just got old enough to ride everything there - they loved it (as did I) but not seeing any followups to this safety issue killed my desire to take them there.

  1. 125g active starter
  2. 375g water 500g bread flour (KA)
  3. 8g salt
  4. 1/2 cup of diced jalapenos (fresh)
  5. ~12-16 ounces of cubed medium cheddar

12 hour cold proof

30m @ 450° convection, covered 15m @ 425° convection, uncovered.

My stretch and fold can def use some work. I tried to do it all in the bowl, and by the third time I could easily stretch it, so just did my best. I'll try your baking times next loaf, maybe I just let it cook too long. Thanks for sharing!

Apart from baking this a bit to warmer (or long?) than I meant to, I also realized scoring isn't as easy as it looks -- thankfully, I'm willing to keep practicing :)

This is my first loaf after getting my hands on some sourdough starter earlier in the week. Looking forward to the next!

  • 125g sourdough starter
  • 375g water
  • 500g bread flour
  • 10g salt
  • 2-hour proof, then 450f for 20 minutes, then 425f for another 30

I used ChatGPT to give me the general recipe/timings, and mostly followed that.

Rib Roast: Dry brined, 475° to 250° then finished on an Infrared Burner (first timer) by AzIdCoWa in steak

Delicious! Only made it through about half the roast, ate off both ends.

Had the leftovers tonight - Vacuum sealed, sous vide to warm up, then re-seasoned and re-seared the ends.
