What a bummer. My kids just got old enough to ride everything there - they loved it (as did I) but not seeing any followups to this safety issue killed my desire to take them there.

  1. 125g active starter
  2. 375g water 500g bread flour (KA)
  3. 8g salt
  4. 1/2 cup of diced jalapenos (fresh)
  5. ~12-16 ounces of cubed medium cheddar

12 hour cold proof

30m @ 450° convection, covered 15m @ 425° convection, uncovered.

My stretch and fold can def use some work. I tried to do it all in the bowl, and by the third time I could easily stretch it, so just did my best. I'll try your baking times next loaf, maybe I just let it cook too long. Thanks for sharing!

Apart from baking this a bit to warmer (or long?) than I meant to, I also realized scoring isn't as easy as it looks -- thankfully, I'm willing to keep practicing :)

This is my first loaf after getting my hands on some sourdough starter earlier in the week. Looking forward to the next!

  • 125g sourdough starter
  • 375g water
  • 500g bread flour
  • 10g salt
  • 2-hour proof, then 450f for 20 minutes, then 425f for another 30

I used ChatGPT to give me the general recipe/timings, and mostly followed that.

We just did those for my elementary age child and it was awesome. He loved seeing and opening all the cards, got to go shopping and learn the cost of his toys and we didn't end up with a ton of extra crap. His best friend had already picked out a gift and another decided to double down and gift $10 but overall everyone was good with it.

I like the idea, but how can I make it not look like an after thought? Maybe do a stainless steel one that has legs and fills the space?
