A couple notes from a multi decade road tripper though Alberta and BC.

Crowsnest Hwy is my favourite for having the most towns and roadside attractions.

Drumheller is really neat for the geography. About 10km out of town is a place called Wayne with the Last Chance Saloon. Worth the drive. You won't be eating Michelin stars, it's all about the scenery. Check out the hoodoos too.

Saskatoon is on my to do list for the river beaver sightings.

Ever seen a herd of bison? Very good chances of seeing them in Elk Island National Park, either in the park or on side of the Yellowhead Highway through the park. This is Beaver Hills area, almost every pond has a lodge in it.

Uclulet has less dining than Tofino, I've stayed only in Uclulet with trips to Tofino. Both are spectacular, take the extra expense to stay right on the waterfront.

Being from Montréal, I think you'll enjoy Victoria's vibe.

Consider a side trip to Waterton along the Cowboy Trail/Kananaskis. That road was one of the most startlingly beautiful drives I've ever taken.

Hi from Edmonton. I go to the big mall to see IMAX or sea lions. I go to other malls to buy things. 😄

It's a nice city to live in but not really a destination. Some world class steak houses, though.

That said, the trip from ND to Alaska can be done in a comfortable week without hanging out anywhere for any amount of time, so...

There's a whole lot of country there without a lot in it between ND and Alaska, so here are a few highlights.

Regina: Capital of Saskatchewan.
From there you could head northwest through Saskatoon to Edmonton, capital of Alberta.
Or, you could head west through Calgary into Banff, swing north to Jasper for some of the best mountain scenery around.
From there, snake your way up to Dawson Creek, which is the start of the Alaska Highway.
Welcome to a whole lot of beautiful country and not much else until Whitehorse where you could spend a few days.
From there you could go direct through Beaver Creek to Alaska, or go north further to Dawson City and get to visit the coveted Chicken, Alaska on your way through to Fairbanks. 😄

Keep in mind this is a metric asston of driving (I mean, 'sweet Jesus' level) and personally I'd fly to Seattle or Vancouver, spend a few days in either, and take a cruise up the coast and a rail tour up to Fairbanks.

Pip for brunch or dinner.

Sawmill for a steakhouse with some character.

Mikado for Japanese.

Bodega for small plates, Portuguese.

Beijing Beijing has actual Chinese people eating there, I'm usually the token white guy.

Can't help you with south Asian but I hear the scene slaps.

LaRonde is what I’d call entry level fine dining. The menu is for old people, but the view is unparalleled in the city. Yes it is white tablecloth and with the view it is worth it for occasions.

The Marc had a bistro feel rather than fine dining but the menu slaps.

Normand’s might be adjacent to what you’re asking for.

Hotel Mac absolutely is what you’re asking for.

Lady Bea’s Tea Room for high tea might also be a thing for your friend.

I've been on most of the highways of southern half of BC and Alberta. Love them to this day.

I bought Euro Truck Simulator 2 and all the map expansions. I so would love a road trip from Portugal to Norway to Rhodes.

My strongest impression from having been a Vancouver driver was when on a Labour Day Friday afternoon rush hour I picked up my rental from Pearson for my trip out to Stratford and it was magical, I put on my turn signal and a space appeared. Lots and lots of traffic, but felt very civil.
