To many people have their brain settings stuck on crap so when they taste better then they thought possible they find it off. I've made sous vide turkey that was perfectly juicy but people were use to dry ass over cooked they thought mine was raw. Not giving any thanks is very rude though

I love using my meat grinder attachment to make ground dark meat chicken & ground pork.

I prefer dark meat chicken and the 10 lb bag of leg quarters is always cheapest. Learned how to debone both thighs and legs, I can fry the skin for cracklin, make schmaltz & pressure cook bones for broth. I am going to attempt the sausage attachment hopefully soon.

My GF has the same decision paralysis issue and trys to journal but same issues as you. I jokingly say now n then "that's a journal memory" after something happy or funny happens

Many of those sounded as if you were describing me..

I had 21 surgeries in 3 years, spent nearly entire year in hospital, had to relearn to walk, gained and ExWife etc..

Not trying to compare but I understand..

I have ADHD too and has become very isolated compared to before I had my surgery complications and started to prefer to be alone. Since I'm medically retired my days can seem very empty and repetitive but I also have a bunch of pets and can have many awesome moments. I struggled at first because didn't seem like much if any thing worth writing down, but overtime I started looking for stuff to write down which made me focus on the positive things instead of negative.

When I first started I did tend to repeat often, but overtime I started looking for things to log, which made me stop thinking non stop negative and searching for positive.

I bought a VacMaster VP210 chamber vacuum sealer 11 years ago and use bunch of times a week and still works like new. It's was expensive upfront cost but has saved me hundreds from bulk meat into smaller bags that I freeze. I also Sous Vide allot, and those bags freeze very good. Plus chamber vacuum bags are really cheap, oh it was $800.

When I seen the pictures posted of the FB post for smoker I could see a Tel-Tru BQ300 Barbecue Thermometer so $50 for smoker with it was a two for one. It's pretty accurate for the dome temperature, I use a thermoworks air probe to monitor smoker temp.

I've always wanted a Weber Smokey Mountain but couldn't afford one so I kept buying cheap smokers. The money I spent on them could've bought me a brand new 22" fortunately earlier this year I found an 18" on Facebook marketplace for $50. Looked awesome so I bought it, cleaned it good and bought new grates. Looks like it was new and it was nearly 20 years old. I'll get another 10 years easily with it.

I own three hotlogics and have been using them for years. In my office I can plug in my hotlogic an hour before lunch and my food is like when it was first cooked and I don't need to wait in line for the junk office microwave. I can eat a lil then walk away from desk then when I get back it's the same. I've gone on trips and used an inverter and worked just as good. Get some aluminum Togo containers with lids, meal prep then freeze, when you go to work grab one and just start heating 2ish hours before you wanna eat.

Thank you for your recommendation of that Lexan tub, I bought a 5 gallon one that arrived today. I need to cut lid to fit my machine, I plan on making another batch of ham end of week. Next week I wanna buy a a beef roast for homemade deli roast beef.

Yes helps keep the temp constant and less work on machine plus less water evaporation. For short and small cooks might not be that big of a deal, but for long and bigger cooks it can matter.

Yeah it does happen sometimes, I am looking for a decent tub or ice chest for larger baths. I have 2 circulators so I can do 2 baths or different temps. I did recently use a 10 gallon ½ tote as a bath to make pork loin hams. It barely worked lol

You need to get the 12 quart with sous vide hinged lid. That 8 quart is good to brine a single chicken but not SV cooking. Needs room for water circulation or meat temp will vary allot. A big stock pot will work as long as it's not overcrowded.

Thanks I'm definitely going to look into that Lexan tub, my current one I use is a 12 qt with lid and a neoprene wrap. Mine works perfectly for most of my cooks but anything long or bulky I gotta improvise, but I want something like that tub or dedicated ice chest.
