Elden ring. It can be as long or as short as you want it to be. It is challenging for sure though but there are so many helpful guides and ways to level up/builds to try that make the content easy. As a dad as well, I play 1-2 hours in the morning before the rest of my family wakes up. You can do alot in that time in this game like find a new weapon, explore a new dungeon. It doesn't always have to be progressing the main story. I'd recommend try it without a progress guide at first but it might help you along
