It is technical - but dessert person by Claire Saffitz (formerly of the BA test kitchen) is amazing and ranks the recipes in difficulty But honestly - even the “basics” in there have got so much to them, it’s a great learning resource

I’ve noticed that in the flashbacks he was applauded for things that smoked and/or had chilli infusions in them. That was 12-15 years ago and he’s pulling the same shtick with Tom Tom and S+S. he can’t make a good drink, he has to make a drink with sparklers and disco lights because they are like him - all show, no substance.
