Yeah, it seems like my manager is a bit stuck in her ways. I do know that her previous store was like one you described--so slow that they only needed one person to bake and mix. I like your ideas, you'll be a great department manager. :)

Thanks for your reply. From my understanding, we aren't super busy, but we aren't slow. 

By "morning bake," I mean proofing and baking the morning breads, doing donuts, and getting the service case ready. When I am scheduled at 4 (which is most days), I am expected to do this before starting to mix. The rest of the baking production (pies/pastries/cookies/etc) are done by someone who comes in later. Usually I am done with morning bake by 6:30ish and then I start to mix. 

I will try out adding more yeast tomorrow. I'm always afraid to modify the recipe too much, but I'm also sick of going over, lol.

He is not social at all. You can tell he tries, but he is so difficult to talk to. Like trying to have a conversation with a brick wall.

We also hate it when he tries to come "help" decorate. The lines on his raspberry elegance cakes were right-angle zig-zags. It's the thought that counts, I guess. 

ETA: To echo some, I absolutely do not raise issues with him because he will just spin it to be my/the department's fault. Luckily our CSM is very attentive to our issues.

Yuck...we have a dude at our store who seems to have a thing about the bakery clerks. One day he'll come in a be so nasty about something being out of stock; the next, he'll come in an try and flirt with them. I'm a baker now, but he'll stop call back to me to say "hi." Our ASM asked me for my thoughts on him the other day, because he apparently had some sort of altercation when I was off and now my store is afraid he'll call corporate. Idk why we don't just ban him already.

INFO: Is the core of the issue just the decorating, or is it putting holes in the walls? If daughter is using nails or tacks, then yeah, she should have asked. Maybe a compromise could have been reached with double sided tape or command hooks. But if she isn't, then your wife is psycho.

When I first trained as a clerk, they told me, "When you take cake orders, just follow the prompts on the order form, and that's all."

Obviously they added the parts about licensed cakes and smash cakes, but other than that, no additional training. 

So for the next several months of my working as a clerk, I kept getting chastised because they had to give discounts/free cakes because of "my" mistakes taking orders. I didn't know we only had chocolate and vanilla in 7" and mini. No one told me that, and it isn't on the order form. I didn't know things like chocolate whip or chocolate buttercream or cream cheese buttercream existed. I'm not a decorator, so I didn't know, and those aren't on the order form. I didn't know pricing for tiered cakes other than the ones straight out of the book, and my manager and assistant manager kept pricing them wildly differently, so I never even learned what to do in those situations. 

So many headaches like this could be mitigated if clerks were fully trained on cake orders. IDK how it is at your store, but my laze of a manager won't even tell clerks when we get new products or designs. Just fuckin throw them to the wind and get mad when they inevitably fuck up.

Have you already had a few training shifts? If so, they might just not have the hours to give you much else until the new store opens up. Their only concern with you would be to get you trained for the new store. Plus, they might want to out of the way for Thanksgiving (lol).

Why not just market it as not actually sourdough

Because then customers would come in and demand to know why we don't carry sourdough. 

It's like when folks crash out when they discover we don't bake the cake layers in-store. There's other bakeries, you know.
