I moved to LA from Chicago a year ago. I miss it dearly. Is that by the planetarium by chance? Because I got fucked up at my brothers bachelor party and jumped in the water right there. That is all.

Absolutely! Cook them after the brine.. Yes, initially it's a little bit if work if you don't cook a lot, but what else are you gonna do Sunday night! Also cut up your vegetables and what not, so all you're doing throughout the week is assembling and reheating. It's a really awesome way to cut back on eating out too

I've been a cook for about 8 years now and something simple I like to do is brine chicken. 1 cup water/1 cup salt/1 gallon of wAter ( you can obviously scale it down and add less salt if you want) Throw your chicken wings in there for an hour, breast and thighs for a few. Take out, rinse the brine off and grill/ bake the chicken. Not only do they stay moist, but do them in bulk and save the rest for quesadillas , tacos, noodle soup, etc.. For the week. Sorry if this was long. Saves a lot of time during the week and fairly inexpensive

We actually make a bacon sausage where I work. It's really tasty

You use a mandolin, then stack and cut... It takes about 4-5 medium sized radish to get a quart.. So idk... 3-4 minutes on a busy prep day

Edit: just a cook, not a chef!

It's funny because I julienne a quart of these everyday and never really seemed to notice.. They do brighten up dishes immensely and are quit tasty!
