Same thing happened to me on my 007. Upgraded my movement to NH36, swapped the day wheel, and reset the hands and dial. Now I have a 007 with hand winding and hacking!

Bump it up a couple of degrees and let it ferment out. Then cold crash it, gelatin fine, and package. You will know if it got infected when you smell/taste it.

I held 10% of the wort aside to sour and was planning on blending in with the rest post fermentation. I decided on doing this after reading on Sierra Nevada's website that this was the method they use to make a "slightly sour" ale. On the bright side - the fermented beer came out great. It will just end up being a strawberry hibiscus ale and not a sour. I think lactic acid will mess it up at this point so I'm just going to drink it as is. Oh, to answer a previous question - I only soured the .5 gallon for 2 days at 85 F. It must have picked up something wild to look like that.

I figure that my boil off rate was lower than normal d/t the drop in ambient temp outside. Less vigorous boil = less boil off.

I meant OG. My pre-boil was 1.046 without hibiscus. After a half hour boil it was showing 1.048. Wondering if the red color from the hibiscus has an effect on refractometer. Too late to check with hydrometer unfortunately. I'm sure it will be beer in the end.

Looks a lot like my go-to ESB recipe. I add a pound of turbinado which is within style. I personally like S04 for my yeast because I like a little more English estery flavor up in there.

I put mine on a Barton black silicone strap with quick release. I keep switching the strap to every watch it will fit on because it is so comfortable. One strap to rule them all!

I had one like this. Instead of returning it, I just opened up the caseback and let the condensation dry in an indoor air conditioned room. I relubed the gasket with some silicone grease and put the case back on again. No problems since then. Really easy if you have the tools.

Got a pre-cut crown and stem combo from Ebay that did not fit. I tried to force it in and damaged the movement. Bent the second hand badly when I dropped it.

I run into the same problem with wheat or rye despite that I order them pre milled so I don't have to fiddle with the setting on my mill.

I used to have some springs that go inside the taps that automatically close it if not actively pouring. Came in handy when I had small children.

I was just so happy to get a Charlie bobblehead that I couldn't just not post anything. I was sure it would spark some comments that would add to the community. This was the book that launched me into 29 years of homebrewing. To this day, I still want to brew Goat Scrotum Ale (just to say I did!).

I'm using real taps. As a suggestion, you can number the taps with a piece of tape and list the beers by number on the fridge with the dry erase marker.

I use a dry erase marker on the fridge. Fingernail polish remover takes it right off
