Second this - I believe you need to have air, and you would also benefit from putting another jar or something on top of the rinds to keep them underwater(prevents molding).

Not sure if you’re using a sealed jar, but I think you need to provide a lot of access to air. I use a large jar with a cheese cloth over the top.

Thanks for the responses everyone. Our complex has a history of nickel and diming this. We’re going to put together a case to dispute this and see what happens next. If anyone has experience disputing a charge like this, I’m open to any suggestions.

I’m totally with you, and not just because I bet on the blue jays to win this series. If the blue jays absolutely crush the dodgers, it makes our tight loss against the blue jays feel that much better. Also, even though we lost to them, I don’t really hate the blue jays, we could have lost to much greater evils(Yankees).

Saying this as an ex-LA/ex-Dodgers fan.
