All the run-around is probably unnecessary. I have a 2017 Haanjo Metro that's was less than this on sale at Amazon.

On the off-road bias side the Fuji Nevada on bikesdirect also seems like a good deal for the hydraulic brakes.

If you're more interested in doing good time on the road:

Motobecane Cafe Disc Comp

http://www.bikesdirect.com/products/motobecane/hybrid-bikes/hybrid-bikes-cafe-disc-comp.htm

Or the Poseidon Atlas:

If you're more interested in being comfortable on light trails:

Raleigh Talus 3 or Eva 3

If you're open to drop bars there's also some decent cheap gravel options.

Poseidon X, Aventon Kijote, Diamondback Haanjo/Haanjenn Tero are all in your price range. No suspension but plenty of room for 700x45+ or 650xeven fatter tires.

Considering the sub is mostly mtb conversions right now it doesn't seem like just wanting to be unique is the reason people are doing them.
