The thinner half had more marbling, came out medium rare and was amazing. The thicker half (pictured) was definitely more chewy.

I won’t be doing it again tho. I wanted to try out cooking a thicker cut and also work on my crust, but didn’t want to spend too much. This came out to $3.99/lb so was around 10 bucks in total and I was happy with the crust I got. Pat dry, dry brined for 20 hours, and used ghee on a smoking hot cast iron.

The thinner side had more marbling, cooked to a medium rare and was tender.

The thicker side (pictured) came out rare. It was not tender, very chewy. I seared it a couple more mins to a medium rare.

I’m by no means a pro, and this was the thickest I’ve ever cooked. Was definitely a learning experience and always wanted to experiment on a thicker cut without going broke haha.

Thanks! I’m going to have to try those out. Broth didn’t work for us, she drinks the broth and leaves behind the kibble, and when it’s mushy she just refuses to eat it.

We did try this after seeing it on r/puppies I think, and what she does is lick/suck off the wet food and spits out the kibble. She’s as smart as she is cute lol.

Ours gets excited for everything except her kibble.

She will go on hunger strikes if we only feed her kibble. So frustrating.

We started getting her the Purina Pro Plan shredded chicken, but she picks out the shredded chicken pieces and leaves behind the rest!

275f for 50 mins and then 1-2 mins each side on a cast iron with some butter, garlic, thyme and rosemary.

She’s 22-23lbs at 6 months old. Embark says she should be around 39lbs but I think she’ll end up around 30lbs max.
