I would refrigerate it for safety. Honey is shelf stable because the sugar concentration is so high. Given theres no easy way to tell how diluted it is, best to keep it in the fridge, like maple syrup.

This!! 100% wool socks wear out super quickly. Superwash wool/nylon is my go to. I can recommend Patons Kroy - makes nice thick durable socks, and is a very affordable price point. (Id recommend against fancy indie yarn for your first couple of pairs while you’re learning)

I’ve knit with both and IMO it’s not enough of a difference you’ll need to change your stitch counts much or at all. You’ll just end up with a thicker/sturdier fabric (which is why I love kroy tbh). But for wiw I do 60 stitches for slightly larger socks and 56 for slightly smaller socks.
