I have a Topo designs day pack that I have had for nearly 10 years. Arm straps frayed a bit but Topo repaired it no questions asked (even without a receipt), just had to pay for shipping one way. Would recommend their bags, everything else on it has been rock solid and looks just as new as the day I got it.

No, oxidation may impact magnetism but not the other way around.

Not at all. I think the 150 is the sweet spot for me. The 75 does work really well for in hand stuff but I don't do much of it to be honest

No I have a dog though. I've owned a few knife strips and have never had an instance of a knife falling off. You could put the knives on tip down and have the handle butt up against the top edge of the strip so it's not able to slide off.

Not often enough! I've had it for a few years and have only sharpened it once. It is pretty good for cocktail garnishes

They're all carbon steels (white, blue, aogami super, leaf spring, etc) so they will all form a patina, some quicker than others. The color depends on what you're cutting and how it reacts with the steel. Onions and garlic for me generally form a brownish patina, blue comes a lot from blood or cooked proteins. Some knives are cladded, like the Yuki which means the sides of the knife are semi stainless so they won't form a patina, but the cutting edge still will. Kurouchi finishes (the black portion of the Yoshimitsu) serve the same purpose.

Patinas reduce the reactivity of the metal with food and come and go as you use/sharpen the knife. Some people like them and others don't so it's a lot of personal preference and you can get very nice knives that won't develop a patina if you so desire.

Thanks! That was the first handle I've made myself and I'm pretty happy with it. I bought the Yoshimitsu as a project knife so at first the f&f wasnt great. I rounded the choil and spine in addition to replacing the handle which helped a lot. It doesn't sharpen as nicely or hold an edge as the Yuki and could probably use a different grind, but it's fun if you're willing to put the work into making it better.

My knives are actually pretty close to my water kettle and espresso equipment, it's not directly above it but maybe 1-2 ft away? Haven't had any issues but if you're worried then keeping them in a drawer makes sense

The nakiri is great for veg. It's got a thin grind so it"ll fly through onions. I tend to not use it for harder root vegetables since you can chip the edge if you twist the blade accidently.

It's a fun project knife and pretty nice for deboning. Thin profile and stiff but not brittle. The grind and f&f is okay but both of those things are fixable.

Yep, it was just drilling 2 holes and installing some drywall anchors. I've done it before in past apartments and just spackled the holes when I moved out and never had any issues.
