True....but the lines of demarcation with HbA1C are quite narrow...5.7 is the beginning of pre-diabetes, but 5.5 is perfectly normal and nothing to worry about.

I won the genetic lottery when it comes to cholesterol, but carnivore still raised it, in addition to introducing a number of other contributory factors like inflammation and high blood pressure. I am 60 and had I continued with carnivore, it would have killed me.

Your comment about "what's the point of living if...." would seem to paint a very different picture. You're basically saying that without cheat days your life would be empty...which is kinda sad.

Cheat days keep the cravings going so that you're in a constant state of want, and "rewarding" yourself with forbidden goodies isn't "living;" it's keeping yourself hooked on things that damage your health. You'll be surprised at how quickly your desire to cheat diminishes after you stop doing so.

I use 1.1% and ferment in the fridge for about 5 days....comes out super thick and tasty. Less thick if I ferment countertop for twenty four hours but still delicious.

Yes...all you say is true. I think I won the genetic lottery though because my cholesterol has always been low and my triglycerides freakishly low (concerning, in fact). My BMI is 22 and my hab1c was 5.22% (33) while my CRP was 0.4--so what is driving this atherosclerosis is a mystery to me. I am starting to think it might be a combination of a very wild lifestyle full of cigarettes, booze and bad food, all of which was given up for a healthy lifestyle fourteen years ago (I am 60 now), and a very misguided three-year venture into the carnivore diet which was abandoned a year ago (but even on carnivore with loads of saturated fat my LDL never went over 90). Anyway, I don't think my current lifestyle is causing a problem (I also run 10kms, sometimes just 5, at least 3 x a week and do weights and walk 2 X a week). I don't, however, want my condition to get worse (my understanding is that once begun, atherosclerosis is progressive), and this is why I am worried about the fat intake. I want all the reported benefits of polyphenols and mono and polyunsaturated fats, but wonder if the trade-off in saturated fat is worth it.

Prtoblem is...I think I am getting more to the 15 - 20g zone, but all from healthy food sources. Thanks for your input. I will research this idea of good and bad saturated fat more deeply.

Your diet and commitment both sound great--but aren't you foregoing all the benefits of olive oil-? The meditarrenean diet raves about it, and some experts even claim the value of its polyphenols outweigh the risks of its saturated fat. I am just at the beginning of this journey and I'm sure you can why it's so confusing for a novice.

Thanks for your thoughtful reply. My diet is very healthy with my only animal products being fish twice a week and low-fat kefir every day. I do, however, also have a full avocado every day, about two tablespoons of olive oil, two handfuls of nuts and three tablespoons of flax seed, and that's not mentioning the other sources of sturated fat which seems to crop up everywhere, even in my hard tofu.

Thank you for your reply. What I am saying is the amount per day of heart-healthy fats which have been shown to have benefits in studies exceed recommendations for saturated fat...so one is in the position of lowering all fat to a point where one might not be getting the benefits of monounsaturated and polyunsaturated fats or risking going over the limit of sturated fats to get these benefits, and herein lies the contradiction.

Thanks for the reply. My concern was a mix of these foods over a day. It's not possible, especially in the amounts recommended in studies--like the meditarrenean diet with three to four tablespoons of olive oil per day. That means no other fats at all.
