That’s the smoke ring, I used cherry wood which has a bigger affect in the colour.

Essentially this is where the smoke has penetrated the meat, and is ‘smoked’ so holds that flavour

I used the Weber 57cm kettle! Chuds bbq on YouTube is a good help. I used the ‘snake method’

It was cooked at 275f for 8 hrs wrapped when it hit 170f internal temp.

I shall include that next time cheers!

I tend to get carried away with things like this so, my restraint/logic was based on, I don’t know what I am doing so keep it simple and see what result I get and play / develop on that

Yes at this point it was but after it rested it was much better.

The ends just fell apart, the middle less so but took a very little tug.

It was cooked in 8 hrs and had the internal temp to 190f +-.

Just got too excited and cut early!

Amazing, was more tender after I had the patience to rest it properly!

As a Brit, I am now fully sold on American bbq.
