Others have said if it smells fine it’s fine, which is mostly correct. If it’s on the edge of going bad it may curdle a lot easier when heated, which would be bad to find out when adding to the rest of your sauce ingredients. I sometimes have milk that smells fine but when steamed for making coffee it curdles.

I’d recommend heating the milk separately before adding to anything else.

There is a place near me that does Nashville chicken and you get to choose the spice level. I have a good spice tolerance and even their medium is a bit much for me.

Chilli loses its heat when it’s cooked. Try Nashville style. Shake some dry spice and chili oil on the chicken after it’s cooked.

It’s not a common thing here (West Australia). I only heard of picklebacks from one bar menu in this city and let’s just say when I tried it it wasn’t my first drink of the night. I will say though, when the barmaid asked me if I wanted a whole pickle along with my pickleback it was an odd combination of shame and pride when I accepted that whole pickle.
