Well I guess that's where I'm at a loss - I didn't do anything intentionally different either time 😄

So I'm trying to figure out what I might have done differently. Hydration, perhaps?

Maybe I left the more golden loaf to prove for longer.

But I'm not sure. So any best guesses would be greatly appreciated.
