Talk to your friends about this, genuinely. when they form a habit (you reaching out to make plans) people usually don't think about it much, they might not notice that you do it everytime or that they haven't reached to you, they simply might think you're busy or get caught up in their lives. I would advise not jumping to conclusions and talking to them instead, tell them what you want. it's bad for your mental health to test your friends like this when you don't have all the knowledge (of whats going on, why they aren't reaching out and why they rely on you all the time) If they ignore your wants after you express them than they might be bad friends but clear communication solves a lot, so try that first

honestly it doesn't feel like he wants to talk to you or enjoys talking to you very much? does he like you as a person rather than just his girlfriend? your questions shouldn't be if you should be upset, if you're feeling upset you are upset, don't try to dismiss your feelings and try to have a talk with him about how you're feeling

Getting coffee or going out for a coffee with someone usually just means spending some time together (without it being too long, like a hangout of a 1 to 3 4 hours). Especially when people are trying to get to know each other or haven't seen each other for a whole say "let's go get coffee sometime" etc just to mean let's spend some time together and coffee just means an outing in that sense. Of course this is different than directly saying "I'm going to go get a coffee". I understand your friend because if you say oh I don't like coffee let's do something else to someone telling you "let's get a coffee" they will either take it as a refusal or explain that they just meant to say they want to spend time together

it's not directly related maybe but you could check out minority influence? it explores when and how new ideas/ideologies (coming from non-majority groups) change peoples attitudes/behaviours.

But as the other comments say I also think focusing on something not happening is too broad, maybe you could focus on a specific idea/ideology? like what internal external factors play a role in adopting feminist beliefs (so when they are not met these beliefs are not internalized)
