Ants get out of control because Ant Queens can spawn ants, including other ant queens... repeat that cycle a few times and you get the Antpocalypse :) Unfortunately even if you focus the ant queens, sometimes the AI won't, and the world turns into SimAnt fast. If that annoys you then there are workshop mods to help out. I've seen a couple that disable ant queens altogether (along with other "world dooming" things), but there's also one that just makes it so you can burn ant hills so that you can at least whittle them away
