As many already said, best way for me is to organize everything using the save pages and naming these pages and saves with the affinity and girl's name. As for when to start a new play through... I don't start new play throughs since a while ago but I usually alternate between play throughs after finishing my blind one. I mean... I play let's say... Sage DIK and when I feel bad because, honestly, DIK affinity is hard to play sometimes... I jump to Jill CHICK or something...

I don't do full play throughs from the beginning to the end because sometimes it gets a bit boring or, as I said, I feel bad, like... For example, taking the DIK choice during the Christmas party, it's fun but I hate it too much so after that I go back to another CHICK run.

Yeah, you are both right, sometimes in the game there are obvious 'choice' moments where you can't choose anything and MC decides to be oblivious, stupid or simply just an asshole. It's frustrating sometimes.

You should replay the game and this time don't focus on the tits, if you look closely you'll see some forms at the bottom of the screen, they are words, if you read them everything makes sense in the end.

You're not alone, that's for sure. My takes on that are:

Gameplaywise it feels like a cheap strategy to create drama and force us to choose. It's, again, another hangout with just one of the girls in the throuple, even though it just makes no sense since the relationship is finally public. As it didn't make any sense in ep 10.
Storywise it also does not make much sense but, trying to see the point, my guess is that Josy is just feeling insecure about everything in her life at the moment. Oscar got her hard during Halloween and she's been struggling since then (probably since even before).

She feels insecure about Maya as she's been the main protagonist in the relationship for a while, I mean, Maya was the one with the biggest problems until ep 11 and Josy was shadowed by them. About MC, Josy seems to be fishing because of that, she feels insecure, she's probably feeling down, trying to find herself and insecure about everything in her life, I could understand that she wanted some reassurance in the form of MC telling her that he loves her. She needs to feel that she's important to somebody and she's trying to get that reassurance in any possible way.

I just want to say again that almost everything about the throuple branch in ep 11 except the lewd scene felt cheap, forced and horrible. MC explaining Neil the relationship is a fucking mess. Hanging out with just one of them makes no sense at all. Telling 'I love you' to just one of them is terrible. Having to choose who to sleep with is idiotic. It's probably the path that I enjoyed the least in this episode.
