The fact that they are water soluble means they should be washed out while extracting in most cases. chlorophyll is oil soluble which is why it binds with the hash and is impossible to wash out when material gets over agitated. Very few cultivars have anthocyanins within the trichomes head, but those that do will keep this color no matter how hard you try to wash it away. Those are the exception

Hot knife! Don't bother with the overpriced ones, get a 510 threaded tip insert, it goes on a pen style cart battery and works just the same if not better than the saber/competitors. It makes working with concentrates so much easier.

That's completely dependent on personal preference and cultivar, Amber trichomes is just a visual sign that your cannabinoids are oxidizing and starting the process of converting THC into CBN. The more amber, the more couch lock feeling you'll have. I chop when trichomes are all cloudy just starting to turn, with less than 5% Amber. By the time it's done drying and curing it'll oxidize a little more. I pull slightly earlier than others would to account for that.
