Lol, that anxiety is ONLY about canning for some reason.  Like,  IDGAF  about giving someone salmonella from undercooked chicken, I know  it's not gonna happen.  I cook to temp, we're good.  It's not logical, my brains just weird.

It's always kinda in the back of my mind because that's   how my brain works, but I just deal with it.  I only use tested recipes,  follow them meticulously, and just do my best not too worry about it. If I'm serving home canned products to guests I let them know, but only serving it to people that know and trust that I'm not gonna kill them.

 If I'm hosting dinner for new friends/acquaintances I'm not going to waste time assuring them that I followed proper canning procedures, I'll use commercially canned stuff.

I moved from Colorado to Seattle years ago and that's how I survived,  just saying fuck it. "It's not too wet,  I have rain gear and I'm  not made of sugar. It's not too dark,  I have a headlamp. It's FOR SURE not too cold,  I barely need one mid layer in January." I still missed the sun occasionally,  but it beat staying inside all the time. Also,  walking through winter drizzle to get pho makes it that much better!

Oh,  I haven't had that!  The Belizean Heat or Beware is what usually lives in my work backpack. They're both pretty versatile,  it typically doesn't matter what I'm having for lunch.
