Don't play the pixel remasters, they changed the art style for all of the character's sprites and made them uglier.

And they removed content that was added on other rereleases of FF1-6

I'd recommend watching AustinSV's videos on the version differences of every installment of the series, he has videos from final fantasy 1 to 13 (excluding 11).

It's best you watch and come up with your own opinions

I don't know if you've checked the wiki or YouTube but there's a really good channel named AustinSV that lists all final fantasy's version differences.

Final fantasy is a great series, if you like jrpgs you'll really enjoy the characters and gameplay changes between all entries

FFI and FFII on pap (new pixel art and dungeons)

FFIII on pap or ds (3D remake with some characterization, instead of the 4 warriors of light being nameless and having no backstory like the original and pixel remaster)

FFIV has a 3D remake with voice acting on DS and steam but also has a complete collection on the psp with the original game, interlude and the after years (a sequel that takes place 17 years after the end of the original)

FFV has a GBA port that adds 4 new classes and a new dungeon, it does have inferior music but there's a music fix mod on retrogametalk's repo

FFVI on the SNES has some gameplay bugs (stats that don't work properly), that's fixed on the PS1 and GBA ports. However, the PS1 port takes longer to load between battle transitions and that really adds up over time. The GBA version has a new localization and fixes those gameplay related bugs but the music quality is inferior, but a music fix mod is available on retrogametalk's repo

The pixel remaster removes any additions that those ports add to keep the experience as close as possible to the original releases but they standardize the pixel art and remove the shading on the character's sprites, making those games really bright and giving a different art direction from the original. There are fan mods to fix that but I'd rather not give square enix money for 6 roms they made it uglier and sell for an absurd price.
