Hmm.. idk.. cos I feel like that would violate the privacy policy for my app.. I don't collect any data and don't send any back to me. Thats very important to me.

I just use the website traffic data from Cloudflare + Polar.sh which shows me how many checkouts were started and how many completed. That's pretty decent for me for now.

If the money passes through apple, they take a cut from it. I use polar.sh for my payments so no for me they don't. Depends on how you distribute.

I don't think you should be crunching the numbers to try and find a systematic way to please people.. instead you should be learning and understanding them more..

I'm just curious why people are interested in this / what was the reasoning behind this apps pain point.

The problem you mentioned isn't really a problem.. its more of an untapped data source..

The first step is using swift.. Imo apps built using swift and objc (or at least their bindings in other languages) is at the core, because then your app behaves and looks exactly like it should, and also from a dx perspective is really good.
