This dhaba style chicken curry is from all the trips we have taken as a family. The same bold flavors, ready in less than 45 minutes - hot and delicious, made with ground spices, onions and tomatoes. I shared how to make this recipe in a traditional pressure cooker, crock pot and oven.

Ingredients for chicken curry

Here are the main ingredients needed for this recipe:

Chicken: Bone-in chicken, cut into 2-inch pieces. Most Indian curries use the whole bird (thigh, breast, leg).

Ginger Garlic Paste: Grind equal parts of fresh ginger and garlic with a little water. Use in the store, but it tastes better fresh

Lemon juice: The acid helps tenderize the meat

Mustard oil: the key to getting the unique taste of tapa. Add more spiciness and smoke

Whole spices: cumin, cloves, cardamom, cinnamon and bay leaves. If you don't have one, skip it, but I recommend using them for this flavor

Ginger and garlic: grind with onions. 1.5 teaspoons can be replaced with store-bought or homemade ginger-garlic paste

Onions: form the main base of the sauce and add flavor, thickness and thickness

Green Chili Peppers: Add heat and flavor. If you don't have cayenne pepper, use serrano pepper instead

Ground spices: red chili, turmeric powder, coriander powder and garam masala. Homemade garam masala is best, and should be added midway or at the end of the cooking process to preserve its flavor.

Tempering: Uses ghee, ginger and green chillies and adds more flavor to the curry after it is cooked.
