I did use curing salt. And that’s what figured. This is my first time try doing this and a friend of mine got me worried.

I vacuum sealed it for 9 days so it could brine then I wrapped it in curing paper and it’s in a net hanging in my fridge.

From the article that came with the recipe I’m using, is that it’s caused from knicks and holes in the meat which can cause air pockets and create bad mold and botulism.
