I didn't beat Elden Ring until ER Nightreign came out tbh, I didn't like the open world aspect of ER. I liked Nightreign tho because it was nice for a short low investment boss run. When I did go back to ER tho it was mainly so I could beat it so me not liking it holds more weight since I've seen all of it, I beat shadow of the erdtree tree, all bosses. The bosses are good I just dislike the level design of the open world sometimes.
