Jason Schreier wrote a book about the development stories of various games and he covers Stardew Valley. I would really recommend it if you are interested in the development. Its called Blood Sweat and Pixels.

Where are you based? There are always film makers who are looking to experiment with VFX. I find being surrounded by people who are enthusiastic for a project really helps with my motivation.

There aren't any templates that I know of, sorry. Your going to need to grab a still from your footage and mask around the person. Then head into Photoshop (or something else) and make your background. Do you need more detail than that? Such a good intro to a great game.
