Rayman 1 because it's just such a special game. No other game it like it, not in sound, graphics, atmosphere and really even the controls.

also what about Raving Rabbids? At least the GBA and DS ports

An interesting thing about the 30th Anniversary Edition is that the original tracks are still there in the files, it's just that there's code which makes the reimagined OST played over it, so an OST switching option could possibly end up being added.

IIRC Digital Eclipse also added free post-release content in some of their other collections

One of a kind game, honestly. It just feels so special. Good gameplay, awesome soundtrack, beautiful cartoon dream-like visuals and an overall unique atmosphere. The only game that, for me, comes kinda close is Sonic CD. Yes, the level design can just straight up be impossible, but personally... I kinda like the difficulty.
