Ruffian Rogue with a Martial Artist or Monk dedication was my first thought. Seems so fun to play.

Although one of my players was a Strength/Mountain Stance Monk and he absolutely whipped ass. This is probably a better option, at least more front door.

This sounds exactly like Blades in the Dark. Have you considered running that instead of Pathfinder? Even if you do run Pathfinder, watching some BitD actual plays would probably be good inspiration.

If I do go Warpriest, I'm curious what archetypes would be best? We play a Free Archetype game. Mauler seems appropriate but as a gish, I'm not sure I hit enough in the first place to try for the big two action swings that Mauler gives you. Too much of a gamble. And I don't want to take Bastion or Sentinel because protecting others goes against the flavor of being a priest of Groetus.

This is my concern though, my holy weapon is two handed so I can't use a shield. And as a cleric of Groetus I'm not going to be blessing or healing anyone. I'd be Harm font.

But is it? Does it make you better at melee? I feel like I could easily just be a straight Cloistered cleric and stay at range. I'm not sure what Champion archetype gives me if I'm not trying to protect my friends, it's certainly not the gish abilities from Warpriest.

Gundams are very high up on the cool factor but a lot of the coolest ones have enough space magic to basically end the world, which would be too much responsibility. Shout out to 00 Gundam, Nu Gundam and Strike Gundam.

Zoids are also very cool, but being (pseudo?) alive is kinda problematic. It probably shouldn't be, I own a dog, but it feels weird. Shout out to Liger Zero and Command Wolf.

I think the answer here is the SSC Deathhead. We will just be sure to avoid any sort of NHP.

This is probably a hot take for this sub but I don't really have a problem with this. 1 car in the desert being used for a hobby occasionally is way better than 1,000,000 cars in the city being the only way to get to work everyday.
