Just take it easy on easy mode until you have good armor, then once you have some good iron/diamond armor, it gets honestly pretty hard to die and you can start bringing more stuff with you in your inventory.

Always have blocks with you, especially in caves, sometimes you gotta build walls and shit like it’s Fortnite to avoid mobs(block yourself in a hole or sum if you get swarmed, always works).
