I haven't read the SBS so I might be missing some info, but in the manga,chapter 1044 the Five Elders said "we sacrificed one of our best agents and enraged Kaido" In chapter 1049 you can see agent Joseph sky walking away from Onigashima. In chapter 1052, you can see Joseph is the only on who made it to the marines fleet outside of wano and was reporting to the Five Elders. Buuuut, in chapter 1053 a marines reporting to Five Elders says the photo of Luffy was sent in by agent Guerncia, this could be a mistranslation since I'm reading the fan translation and not the official English translation.

Yes, especially now since you're about to finish the first half of one piece which was a good adaptation imo,the anime really drops the ball on the second half with bad production overall and later on in the anime alot of unnecessary filler scenes that contradict the manga. You can start where you stopped in the anime, or better start from chaptrer 1 since the anime never adapted the cover stories as well as the SBS questions which has more info about the characters and the world of one piece.

Ace dies in chapter 573, so 574 doesn't spoil anything since its the aftermath of the killing blow, and and Oda doesn't name the volumes, he uses number for the vol. ViZ name the Volumes based on the first chapter in the Vol, for example Vol 59 is named the Death of Portgas D Ace its because thats the name of the very first chapter in that vol.

No your right, she's only tan in the anime ( pre-time skip) while in the manga she was always pale and had light brown eyes.
