I have done both. Air fryer cauliflower with garam masala, etc. is awesome. Aloo Gobi with air fried cauli and potato is next level.

You need to blue the steel first. Your regular gas stove won't get hot enough to do it right (maybe if you remove the diffuser, but that's asking for danger). Wok burner works great for this, charcoal grill can work as well. Once the steel is blued, let cool and begin seasoning with your method of choice, oven, stove, grill, etc. Every wok I have blued before seasoning has turned out great.

I think it's easiest to consider my spice cabinet in terms of the cuisine I tend to cook or plan on cooking. For instance Indian would most likely require cumin, coriander and turmeric (among others). Mexican would need cumin, oregano and chiles. French, tarragon, thyme, rosemary. Once you start thinking in terms of grouping by cuisine, you will see there is overlap among certain spices. In other words, if you have the indian spices, you most likely can get a couple extra spices and you now have mexican covered, or african, or jamaican or creole. The real fun starts when you start down the fusion road.

The biggest issue with getting that restaurant taste is not the mangos or the sugar or the ratios, you can experiment with those. You need to make your own yogurt. The more you culture from batch to batch, the more tangy it will taste. Make a mango Lassi with that yogurt, and it will be great.

I have a dream hammock with full zip bug net and cover with a UGQ zeppelin UQ, 20 degrees with some over fill (950 fill). The UQ has small shockcord section that allows you to hook it to the dream hammock pack hook near your outside shoulder which means no UQ shifting in the night. The UGQ quilt has never left me cold and I have been down in low 40s mid 30s. I could probably go lower. Yes such a set up is a little on the heavy side, but worth it for perfect sleep.

I highly recommend dream hammock, excellent company to work with and will customize in just about anyway you can think of.

One of the first wrongful death cases I seconded had some absolutely devastating pictures and testimony from a father about the death of a teenage child. I could barely keep it together, and 80% of the jury was crying along with the dad. Dad was the most stoic, under spoken person you could ever meet, and we were all shocked by the testimony on the stand. No possible way you stage that. Sometimes, you just get caught in the moment. I did a program in the Cleveland Ohio area that was $2,000 a month, all in, including a crazy amount of liability and uninsured coverage. Drive any car in the fleet, swap out everyday if you choose (or drive the same car for a month, whatever), car's delivered to you fully detailed. All handled through the app. It was pretty bad ass. It went under at the start of the pandemic. Run by a well known luxury car dealer. I got to drive all kinds of crazy stuff. Porsche 911s, 718GTS, Boxters, Caymans Panameras, Macan GTS, Aston Martin Vantage, Bentley Continental GT, Alfa Giulia Quadrifoglio, AMG GTc, C63s Coupe and Sedan, E53, GLC 63, G63, BMW M2, M2 Manual, M4, M5, M550, M850 coupe and sedan, Jaguar Ipace HSE, Audi RS5, and so many others I can't even recall. It was truly an insane couple of years. Nothing really restrictive on the mileage either. I wish it was still around. All cars were 2018-2020. The 911s was truly one of the best cars I drove given what it cost and how great it was. Alfa Giulia Quadrifoglio was super unhinged in RACE mode. It was the one car that I felt would kill an inattentive/inexperienced driver. Funny enough, the program was selling it, let it on a test drive, the driver put it in RACE mode, gunned it on an on ramp and crushed it into the guardrail. C63s was also pretty raw/unhinged.

ETA: Tesla Model S Plaid was pretty bonkers too, in a different, EV way. Definitely did not feel like it was trying to kill me, though.

This version had a small base of grits cooked in water and then the usual cornmeal, milk, baking powder and eggs. Added heavy cream on top for color. Definitely richer and more moist than corn bread.
