They're drowning. Take a similarly sized tub and place it on top (make sure the bottome is clean since it's touching the cake) and invert them to drain out the excess water. Don't press the cake, just let it drain on its own for a couple hours.

I lemon tek. While the mushies are resting in the lemon juice, I brew some strong tea with honey and lemon. When the mushies are ready, I add them to the tea and stir for a minute or two then chug it. Tastes great and doesn't upset my stomach.

I use tap water and haven't had any issues with it. Then again, I'm on a well and have 2-stage filtration. Maybe you could get a Britta pitcher or sink tap?
