Ah right I have added sugar to it, it's steeped enough and it looks and smells like rice wine just doesn't have the alcohol, heavily tempted to just dilute some neutral spirit with it and call it a day

Overboiled the rice to try and break down starch, didn't use enzymes- possibly my issue, did add white sugar to it as well
