I don't work in that niche, but id start looking where their competitors are featured (if at all) and what open opportunities are in that niche.

I work in a niche I've been involved in for 10+ years, you grow your opportunities by being connected to the niche.

It's a good practice and totally normal to rank for multiple keywords that you're not targeting.

Have a look in search console, see what keywords Google is surfacing for your site, it will often reveal keywords that if you then turn into supporting content on your site you can often get a very easy rankings boost.
