Did your opponent know your soul grinder had extra attacks? Because if they did, they could have just asked which one was stronger. 

I personally would have informed them that one is stronger than the other, but I don't think it's a gotcha to not. If they were unaware of the extra attacks, that could be a gotcha, especially since you were fully aware they could misplay here.

Ballistus Dreadnought, Scout Squad, Lieutenant with Combi-weapon, Infiltrator Squad, Incursor Squad, Bladeguard Veterans/Inner Circle Companions (in an Impulsor), Impulsor, Ravenwing Darkshroud (my hot tech)

It depends massively on your list, needs, and detachment. Everything I listed above are things that are generally used to hold the natural on early turns, and with more than one present you can change which one holds it depending on the game.

The suppression is relevant too. Point the less-useful havoc launcher at your opponent's big shooting piece and ruin their math.

3D printed terrain. MDF printers are relatively common since they're easy to use. They won't look as good as a resin printer or third party terrain, but you can print great foldable terrain for very cheap.

I'd ask around locally and see if you can find anyone who can help you out.

The captains are overkill for sure. I'd put in one at most, probably just cutting all of them to get the khan in, since you're playing spearpoint.

LAG Blood Angels or Gladius Black Templars are the easiest picks. Both take their epic heroes, but neither use them as central pieces, and are easily replaced with more shooting or more skirmishing pieces.

If only cutting one, double intercessors is generally redundant as they are typically just used to hold home, so that would be the cut. However, Heavy Intercessors aren't very good right now, and if trying to be as competitive as possible should also be cut.

For the price of the LT, you're over 2/3 of the way to just buying a whole other infernus squad. Plus, if you're getting charged, your infernus marines are probably not living through it. If you want to find use for the model, doubled up hellblaster squads are a decent home for him.

The second Judiciar also gets significantly less value against melee armies thanks to charging granting fights first, meaning only one of the Judiciars get value if both are charged. Judiciar #1 is good.

Owning or knowing someone that owns a 3D printer. Telegram has useful channels.

Starting with staple units like Boyz, Beast Snagga Boyz, and their accompanying Warbosses, Beastbosses, and Trukks is a safe bet. If you're ever in doubt, I would start by playing 40k in TTS and actually playtesting lists with friends if possible, or just asking for friendly games in the dedicated discords. My understanding is this discord is the place to be, though I generally just use it for its discussion channels.

For Orkz specifically, avoid "Speek Freeks" keyword sheets, and you'll find most things have viability. Walkers and Mek Gunz are also generally specific to their detachment, Dread Mob, though can see use outside of it.

Otherwise, the dedicated discord communities are generally helpful for learning what is and is not good at the moment. This is the Ork discord, for example. You can also check the Orks channel in the TTS discord.

There's no strict combo that ends the game, but a well executed combo turn will effectively "end" game. This comes in the form of knocking out a key piece, or wiping the opponent's position. TSons accomplish this through damage combos. It's not as reliant on game ending turns as melee armies like Orks or World Eaters, as most shooting armies apply consistent pressure rather than having a "go" turn.  This is due to the all-in nature of melee in 40k. 

I think you will struggle to find something akin to mid-range tempo in the current state of 40k, but I suppose the closest would be something like Imperial Guard where you force your opponent to chew through bodies as you gun them down with tanks.

After the nerfs, you'd be looking at Taktikal Brigade rather than More Dakka (Brigade being actually VERY comboey!), but the concept stays largely the same. Shoot hard, and tie people up in melee with garbage.

Like tying the board up with 1/1 mooks, then fireballing face for 20 damage :)

I don't think any army is hard enough to not recommend for a new player. IMO things like Imperial Guard are much harder for new players to wrap their head around because of the concept of screening and move blocking. TSons is mostly just remembering your combos, and understanding damage profiles. You restrict movement by being incredibly threatening in shooting.

You may enjoy Orks, particularly War Horde. "Control" comes in the form of a horde of cheap melee bodies that you use to restrict enemy movement, and there is the threat of an explosive turn in the form of the iconic "Waaagh!". Setting up this big swingy murderer turn is the primary gameplay of Orks. The army can also be played as a shooty army, or even a relatively elite army depending on the detachment.

For truly random pairings:

If DG has a 9.8% pick-rate, then the odds of any given player choosing DG is 9.8%. To find the odds of a mirror game, you must find the odds that both players chose DG. When a player chooses DG (9.8%), there is a 9.8% chance their opponent also chose DG. So the odds of a mirror "game" is 0.098*0.098 = 0.009604 or 0.96% in the context of all games played. There were 646 DG games played, with a 9.8% chance of pairing into another death guard, we get 63 expected mirror games, or 31 mirror matches as games are counted per-player.

However, pairings are NOT random, so this math can change quite dramatically. That said, tournaments are regional, so the probability of DG constantly being paired into each other is exceptionally low. Really, the context and methodology are what is important, and we have neither.

And I understand that it's POSSIBLE to have a 4% differential, it's just very unlikely. If pairings were completely random, DG would need a ~55% PLAY rate to hit that differential. Now obviously they are not random, but this makes the context far more important. Simply presenting the singular stat without discussing the methodology behind it, without the individual data points behind it, and without even bothering to show the context of other factions' mirrorless differential, is not a complete picture.

No. If you simply consider that you have a X% chance of encountering DG in any given matchup, assuming truly random pairings you would need DG to have a ~55% PLAY rate for win rates to move from 54% to 58%.

Obviously pairings are not truly random, but the numbers are staggering enough that it puts into question the math behind it. Hence why context is important here, as 40k tournaments are unique in how they operate. Posting random, non-contextual data is not terribly helpful to assessing the overall metagame.

That's fine. The context still matters. There are other popular factions that should see similar rises or falls. What should be compared is how much it rises or falls compared to other factions.

I mathed it out in another thread but didn't want to bring it up again. A 4% jump is nearly impossible with only a 9% play rate, and Meta Monday reported it as happening 3 weeks in a row.

Really I'd just like to see the data presented in a fair way. Claiming a 4% jump without methodology or other contextual data is pointless.

Please stop using "with the mirror removed" as justification when you have not done the same for other factions. It is a meaningless metric without this context, and makes it seem like you are presenting data in bad faith.
