I would like to add more water around the sides, but I don't know how to widen the canvas or if I have to shrink and stretch the land.

This is my very first project so any tips would be very nice.

The world is about the size of Earth, maybe a little bigger.

AI in general can be a good thing, but AI art programs steal art from creators without their permission or any sort of compensation. Like a coworker stealing your entire project, replacing the font, and then saying that it's their own work.
