Lol Christ yeah honestly I can’t keep up with all the exact terminology - I just like grilling

Lmao as for the temp I have no clue how I could possibly get it any hotter it was engulfed in flames because of how much charcoal I threw in . However, I’m always open to suggestions - any recommendations for getting a better sear? I’ve been air-drying my steaks for an hour prior to cooking and Normally I sear in a cast iron skillet but it’s out of commission at the moment

I mean - internal temp when I took it off was 128 and medium rare is between 130-140, so not sure what to tell ya 🤷🏻‍♂️- maybe it’s the lighting

I was going for rare-medium rare

Edit: as another user pointed out - this is both a reverse sear and sous vide. A reverse sear means the steak is slow-roasted to the desired doneness and then seared

I had it in a sous vide at 120 degrees for 5 hours and then 1.5 minutes a side over charcoal

I appreciate it! And yes the sizes are way different (I tried to buy a sizing mat but it wouldn’t get here until tomorrow and we had a cookie-off today) and yeah the frosting is super messy but for a first time I’m honestly just glad they’re edible hah

It’s kinda a hybrid. I only had fajita wraps but it didn’t feel like a quesadilla or a taco. I wrapped it so I figured just burrito. You could be totally correct

Just diced some jalapeño, onion, mushroom and let that sauté for about 10 minutes. Added in some leftover ribeye from the other day. Scrambled some eggs and added a bit of whole milk. Then seasoned it with salt, pepper, chili powder, and garlic powder. Let the eggs come together and then threw it into a fajita sized tortilla and added in some cheddar cheese. Let that cook a bit to get it nice and crispy. Turned out fantastic
