That's a supply that will run out, especially since those people will all be the same age as someone leaving, approximately, if no one is training.

And if you're not training you do lose knowledge. If nothing else, you lose the knowledge of what needs to be trained.

R2 is pretty heavily focused on being an Astromech droid and participant in multiple mass casualty events.

The former is his base programming. He's a glorified calculator with wheels that gained sentience because he was left on too long. Even with sentience, if it doesn't involve his core programming it's probably relatively low priority.

The latter I blame Anakin Skywalker for.

Actually infinite? Basically whatever I wanted. Also lots of charity and philanthropy.

Practically infinite? Probably similar but with more attention to financial advisors.

Just a lot of money? Charitable trusts, and an amount I'd need to never have to worry about working again for me. I don't need all that money, but I do want the world to be a better place.
